[Yamagata, Murayama City] Challenge it on an empty stomach! The famous mountain ramen at the popular shop ‘Ramen 405’ アイキャッチ

When you’re unsure about where to have lunch in Murayama City, there are days when you think, “I want to eat heartily today.” Precisely because Murayama City does not have a large number of restaurants, a single place that offers a high level of satisfaction is a valuable find.

The “Ramen 405” we introduce this time is a popular restaurant that often has lines during lunchtime and can be considered a staple for lunch in Murayama City. Their hearty ramen is a specialty, allowing you to enjoy a bowl that satisfies both your stomach and your heart.

‘Ramen 405’ is a popular restaurant located in the Tateoka area of Murayama City, where lines form during lunchtime. It is especially favored by those who want a hearty meal.

The signature dish is a G-style ramen called ‘Yama Ramen.’ It features the characteristics of G-style ramen: extra-thick noodles, plenty of back fat, a mountain-like heap of vegetables (bean sprouts and cabbage), and a generous amount of garlic, making it an impressively impactful bowl.

On the other hand, the restaurant also accommodates those who might find a hearty meal too heavy, offering relatively lighter options. Additionally, adjustments such as no garlic or less fat are possible, so it can be enjoyed even on days when you have plans after lunch.

The broth is rich and flavorful, based on pork bones and chicken bones, and the noodles are homemade with a chewy texture. Not only for its volume but also because each bowl is carefully prepared, these qualities contribute to its wide popularity.

Entering the Store|How to Order at Ramen 405 and the Interior of the Shop

Ramen 405 Entrance and Ticket Vending Machine

Because it is a popular shop, weekdays at lunchtime are bound to be crowded. The lunch hours (around 12:00) are especially busy, so it is recommended to visit at a different time.

This time, I visited right at the opening of the evening session at 5:30 PM, but even then I was already the second customer.

At Ramen 405, you first purchase a meal ticket from the ticket machine in the entrance windbreak room. Payment is cash only, and 10,000 yen bills cannot be used, but if you ask the staff, they can give you change.

After entering, a staff member will come to you to take your meal ticket. At that time, you’ll be asked about the amount of garlic, and in the case of tsukemen, you can also choose the thickness of the noodles (thick or thin). After that, you will be guided to your seat.

There are 8 counter seats, 2 table seats (each for 4 people), and 2 small tatami seating areas (each for 4 people). Child chairs are also available.

Food Report|Challenging the Specialty ‘Mountain Ramen’! Let the Climb Begin

Can you reach the summit? Mountain Ramen

When talking about Ramen 405, you can’t skip its specialty, the “Mountain Ramen.”
The overwhelming amount of vegetables and impact, characteristic of G-style ramen, is exactly like the “view before a mountain climb.”

Can you actually reach the summit safely?
We’ll check its true ability as we eat through it.

Mountain Ramen (G-style)

The signature menu item, Yama Ramen, is impressive with a mountain-like heap of vegetables (bean sprouts and cabbage) standing tall. At the summit, pork back fat sits like snow-capped peaks, and thick slices of char siu rest like a slab-like rock wall, seemingly stirring the climber’s desire to ascend.

The smooth, slippery texture of the noodles, which are thick and chewy, blends perfectly with the soy sauce-based soup, making it a very satisfying bowl. Lifting the noodles with chopsticks, coating them in the soup, and bringing them to your mouth—you get the chewy texture, rich umami flavor, and the punch of garlic… from the first bite, there is already a sense of the view from the summit.

Also, finely chopped garlic is quietly placed in the shadow of the vegetable mountain, with a presence like pure white wildflowers. It makes you wonder, “What change would occur if I dissolved this?” Dissolving it into the soup midway adds a nice accent, allowing you to enjoy the meal without boredom until the end.

Although the large amount of back fat gives it a rich appearance, it is not heavy in taste, with an unexpectedly light and clean aftertaste.

“Yama Ramen Miso,” which has less vegetables (only bean sprouts) than “Yama Ramen.”
However, this one also contains garlic and packs quite a punch, making it a very satisfying bowl.
It has a rich, somewhat heavy flavor, and it’s especially something you want to eat during cold weather.
*Garlic can also be omitted.

Dipping Noodles + Extra Meat

Tsukemen + extra meat

This also has a rich dipping sauce full of back fat and garlic, with chopped chashu inside.
The small bowl in the front can be ordered for an additional 300 yen as extra meat.

You can choose the thickness of the noodles and whether or not to add garlic, so even those at work or with plans can enjoy it without worry.
At the end, enjoy it with the soup-wari.

Summary

“Ramen 405” offers a hearty, fully satisfying bowl.
Even while your stomach is stuffed, each dish is so addictively flavorful that you’ll find yourself already thinking about when to come back next.

Why not try conquering this bowl yourself?
If you’re in Murayama City and want a filling meal, or if you’re looking for G-style ramen or tsukemen, this is a bowl you should try at least once.
