Yamagata Menya Shingari, located in Murayama City, Yamagata Prefecture, is a noodle shop where customers can freely choose from 24 different menu combinations to suit their tastes.

You can choose from three types of noodles – soba, udon, or ramen – and choose toppings such as chicken or pork, and whether you want it hot or cold, making this a must-visit restaurant for noodle lovers!
The owner’s desire to “deliver a bowl of noodles that you won’t get tired of, even if you eat it every day,” has led to an incredibly extensive menu.

You can choose from a basic menu that you can combine in any way you like!

Wild vegetable soba

First of all, Shingari’s menu allows you to choose between “hot” or “cold” x “soba, udon, or Chinese noodles” x “chicken, pork, beef, or wild vegetables,” for a total of 24 different combinations!
For example, you can freely choose your favorite combination, such as hot “wild vegetable udon” or “pork Chinese,” or chilled “chicken Chinese” or “beef soba.”

Apparently, the “selectable menu system” at the end has already been registered as a utility model! It’ll be fun to think about which combination to choose each time.

Spicy Chinese

In addition to the “Selectable Standard Menu,” Shingari offers a wide variety of unique menu items, allowing you to choose according to your mood and preferences that day.
You can go for something exciting with the popular “Spicy Gari Series,” try the “Double Mixed Series” which lets you enjoy two types of noodles, or try the “Three-Tsume Series” which lets you savour all the ingredients in luxury!

What’s more, you can choose whether you want all of these dishes hot or cold, and whether you want soba, udon, or Chinese noodles (the double mixed series only comes in cold).

By the way, the most popular dish is apparently the Spicy Pickled Chinese Noodles (930 yen (tax included)).

[Summer Only] We also recommend switching to “Mugikiri” noodles.

At Shingari, we recommend switching to “Mugikiri” noodles during the summer.

“Mugikiri” is a flat noodle that is commonly eaten in the Shonai region. It’s chewy and easy to eat, making it perfect for summer! Of course, it’s best served chilled.

Shingari also offers a takeout menu!

The great thing about this ramen is that you can eat it however you like, by dipping the noodles in the soup or pouring the soup over the noodles.
The amount of noodles is 180g, the same as in the store, so you’ll feel very satisfied!

You can also take home fresh soba noodles and Chinese noodles, so it’s recommended for those who want to eat freshly made food at home.

Stylish interior! You can enjoy your meal in a relaxed atmosphere.

The interior of the restaurant, which is styled after an old Japanese house and decorated in black, has a very calming atmosphere with tables, a counter, and tatami seating.
There are chairs for children, and a children’s menu (Children’s Ramen with a Smile, including a snack, for 290 yen (tax included)) is also available.

There’s also a tatami room that can accommodate up to 12 people, making it a great place to bring large family or relatives!

Original character LINE stamps are also on sale!

Yamagata Menya Shingari has even created LINE stamps featuring Donmai Shingari Nosuke, an anthropomorphized version of their signature dish, “Spicy Gari Chinese.”

Yamagata Menyatono (Shingari) has been loved by locals for about seven years since it opened in Murayama City, Yamagata Prefecture! It’s so popular that it’s even been featured on Yamagata TV many times.

The noodles here are all thick and very filling.
It’s incredibly satisfying.

I recommend the “Chilled Chicken Chinese.”
The light soup and chewy, medium-thick noodles are a perfect match, and we recommend you give it a try at least once!

It can get a little busy around noon during lunchtime, so the best time to go is right after they open at 11am, or after 1pm.
